In 1990 the restaurant moved into Norwich, in Upper St Giles, a stones throw away from the City Hall, again in a butchers/fish shop, nestling in a cul-de-sac, under the protective shadow of the Roman Catholic Cathedral. This was a time to throw away country style and go ‘upmarket’. Builders were employed to revamp the existing ‘ad hock’ bistro style and designers from London transformed it to a sophisticated image. Even professional chefs were employed to assist David, replacing the homely ‘kitchen girls’ from Wymondham.
