In our quest for the perfect barbeque, we have travelled through America’s traditional regions of wood fired cooking, from the Deep South to the Midwestern plains and beyond. We cook “slow and low” - this means slow cooking over long hours, at low temperature, using seasoned dry fruit and nut woods - like ash, apple, cherry and hickory. The result of this cooking method is our barbecue’s distinct and unique smoke flavour, aroma, colour and texture. This cannot be obtained any other way.
